Mount Gay rum, often referred to as the 'rum that invented rum', was created in Barbados in 1703. With Christmas around the corner, the company shares its top rum dessert recipes.
Rum Banana Flambe
1 cup flour
1 tbsp sugar,
1/4 tsp salt
1 and a half cups milk
1 tbsp Mount Gay Eclipse rum
3 to 4 beaten eggs
Sauce 2/3 cup orange juice, 1 tsp lime juice, 1 tsp grated orange zest, 2 - 3 bananas sliced, 1/4 cup sugar, 1/4 cup of butter, 1/3 cup of Mount Gay Eclipse rum
Mix the dry ingredients. Then add cream, milk, Mount Gay Eclipse rum and eggs. Beat until smooth. Let it stand for 30 minutes. Melt a little butter in a pan. To make crepes, spread a tablespoon of batter thinly onto the pan, cook till light brown then flip and cook the other side. You can store left over batter in a fridge. For the sauce, boil the juices and zest until thick (about 5 to 8 minutes). Add bananas, sugar and butter. Pour Mount Gay Eclipse rum last and set alight before pourng onto the crepes. Enjoy hot.
Sin chocolate coffee cake
Ingredients 6 oz of chopped chocolate, 6 tbsp of butter, 3 tbsp brewed coffee, 2 tbsp Mount Gay Eclipse rum, 1/2 cup ground almonds, 1/2 cup sugar, 4 eggs separated, shaved chocolate
Pre-heat oven to 150 degrees celsius. To melt chocolate, place it in a bowl that's resting on a pan of simmering water. Once melted, add butter, coffee and Mount Gay Eclipse Rum. Remove from heat and stir in almonds, sugar and yolks, one at a time. Whip egg whites until peaks form and fold in slowly to chocolate base. Pour mix into a greased pan and bake for 40-45 mins. Let it cool completely. Whip heavy cream with a tbsp of sugar and three tbsp Mount Gay Eclipse rum until stiff and serve as side topping. Garnish with shaved chocolate and serve.
