Vinod Aggarwal of Sunshine Stoves is returning to the classic tradition of using lava rocks in stoves.
WHAT IS IT?
Instead of charcoal, the gas flame heats lava rocks. Grease and fat that drip from the food onto the rocks turns into smoke, giving the food a distinctive smoked or chargrilled aroma.
WHY IS IT GOOD?
Lava rock is lighter and more porous than most types of rocks. This means it heats up quickly and creates an even distributer of heat. It is great for slowcooked foods like stews, roasts or barbecues. Unlike a charcoal grill, where live coals hold their heat for long, lava rocks heated by a gas flame can be tamed at any point, retaining the unique flavours of each dish.
